On the palate, the wine has a robust, concentrated character, a firm structure, and small black fruit and licorice notes on the aftertaste. ⟡ Pairings : Pasta with meat sauce, Roasted red meats, mature cheese, rice with meat.

Castello Monaci is set in a 16th-century castle with medieval roots, once home to Basilian monks who cultivated a winemaking tradition. Owned by Lina Memmo and Vitantonio Seracca Guerrieri, the estate practices meticulous vineyard management, harvesting at night to preserve grape quality. Each parcel is vinified separately, and aging takes place in an impressive rock-carved cellar, home to 1,000 barriques and 18 large French oak barrels.
